Tasting Notes:
Deep ruby in color, this wine displays rich aromas of black currant, plum and spice. Good grip on the palate with concentrated flavors of black cherry, black currant, dark plum and touches of vanilla from the French oak. Long fruit finish.
Vineyard Notes:Crafted from a blend of the finest blocks of our mountain-top and benchland vineyards, the variety of clones (Cabernet Sauvignon 4, 6, 8, 15, 191, 337, 338, 341) and hillside and benchland soils gives this wine a unique complexity.
Production Notes:The grapes were picked in the cool mornings and crushed into small open top fermenters. After cold-soaking for three days to extract rich color, the must fermented with native yeast. After all the flavors had been extracted from the grape skins during fermentation, the wine was gently pressed out, settled, and racked into barrels.
Food Pairing:Pairs well with lamb dishes - winter lamb stew or rack of lamb, steak with béarnaise sauce, and anything with a green herb crust.
